Our Story

Fillo Bakes was founded by Neha S Nirmal and Nischal Vasant Meethal in December 2025, with a mission to revive the nostalgia of neighbourhood bread vendors. We wanted to bring back that warm memory of fresh bread reaching your doorstep—the way milk vendors do today. Drawing from years of experience in the F&B space, we launched a 100% vegetarian, Japanese-inspired moving bakery that celebrates fresh, handcrafted breads made with precision and care.

Our Vision

Growing up, many of us remember the warmth of local bakeries: the smell of fresh bread in the evening, picking up pav for dinner, or buns for tea. We believe that fresh bread can become a daily staple, just like milk subscriptions. Our moving bakery concept brings that nostalgia back—delivering fresh, handmade breads directly to your neighbourhood, with every batch baked fresh after your order arrives.

Our menu celebrates Japanese-style baking with Indian sensibilities. Our shokupan is a signature soft milk bread that took extensive refinement to perfect in an eggless format. Our karepans feature crispy outsides and cloud-soft insides with innovative fillings like umami-forward vegetables and slow-cooked ratatouille. Our anpans are soft buns filled with fresh cream in flavours ranging from chocolate to banana biscoff. We also offer toasts, pies, strudels, and seasonal innovations—all made with the same commitment to quality and precision.
